Veritas Shiraz

 

2008

The Veritas range consists of small-quantity, single-vineyard wines that are sold exclusively from our Tasting Room in the Barossa Valley. The label is a resurrection of one of our labels from the 1950s, reflecting our family history and Barossa heritage.

Grapes for the Veritas Shiraz are crushed, then immediately inoculated with selected Rhone yeasts. Fermentation involves twice daily pump overs. After time on skins the lots are racked, returned and the juice pumped back over the skins thus breaking them up. The pressings juice is returned to the free run. Post fermentation the wines are racked twice to remove the lees, then transferred to oak vessels, 10% New American, the rest shaven French and American, for maturation for 11 months. The Shiraz was bottled and held back for three years to retain some valuable bottle age. The Veritas Shiraz is a classic,opulent Shiraz with fine lingering tannins.
