Halation Ratafia
2006
The Ratafia is made from the pressings of the Riesling. Winemaker Christa makes a wine and then fortifies it, by adding a good brandy. This kills any yeast, stopping fermentation to retain the sweetness, and increase alcohol. It is then stored in a French Oak barrel for up to two years to age and develop further characters. A mid-golden yellow colour; nutty fresh aromas, showing a pungent herbal to sherry-like nose with hints of fortifying spirit; attractive sweet to very sweet palate, with a complex and unusual dried fruit and fruit cake character with dried apricots being the most prominent.
Match to flourless orange cake, or stone fruit desserts, or baste a leg of ham before baking.
