2008 Rolf Binder Viognier

A gem in our cellar, and with a touch of oak, one that will drink well for a number of years to come.

2008

Varieties

100% Viognier from Veritas Estate vineyards.

Colour / Condition

Clear brilliant yellow

Aroma

A heady perfume of fresh white peaches, orange marmalade, and hints of citrus blossom.

Palate

A smooth rich palate with creamy mouthfeel, a sweet stonefruit lift, and slight bitter marmalade finish.

Food Matches

Mediterranean cuisine, particularly shellfish, seafood and poultry dishes.

Rich rabbit and other gamey white meats, and spicy foods balance well with this rich drop.

Alcohol

13.5%

Soil Type

Sandy loam

Average Age of Vineyard

1995

Average Yield

Less than 1 tonne / acre

Vinification process

The grapes are hand picked, then immediately crushed and pressed.

The juice is place in a mixture of new and two-year old French oak barrels, where it is fermented and left on lees for up to six months.

Malolactic fermentation occurs during this time, adding a rich creamy palate to this full-flavoured wine.

Bottled early November.
